SHELF-STABLE MILK & CREAM

One thing we talked about at our stake class a few weeks ago was cooking with shelf-stable milk and cream. There's nothing better than creamy comfort food after a long, hard day at work or when you're under stress. But how do you expect to be able to make that kind of comfort food if the power goes out and the contents of your refrigerator spoil? The solution is easy--buy shelf-stable milk & cream!


Gossner Foods is a local company in Cache Valley, which offers shelf-stable dairy products. Gossner U.H.T. (Ultra High Temperature) Milk is real Grade A milk that has all the vitamins and nutrition of conventional pasteurized milk and is ready to use. No preservatives are added. 

Gossner's U.H.T. Shelf Stable Milk is heated to 282 degrees and held for several seconds, then cooled to 70 degrees in a continuous pressurized system. The milk is then packaged aseptically in a special Tetra Pak container. The elevated temperatures are sufficient to destroy all pathogenic and spoilage bacteria, hermetically sealed to retain freshness. The milk comes in 1% milk fat, 2% milk fat, and multiple flavors including chocolate, banana, root beer, strawberry, cookies & cream, orange cream and vanilla.


Gossner Whipping Cream comes in 8 oz. or 32 oz. cartons. The whipping cream is processed the same way as the milk, allowing it to be stored on the shelf at room temperature for months before being opened. Once the package is opened it must be refrigerated. The printed expiration date on Gossner shelf-stable products is usually about 3-4 months, however, we've used this cream in recipes for upward of 6 months after the expiration date. After about 6 months, there will be minimal separation of liquids and solids, which can be eliminated when shaken.

Some of the yummy things you can make with shelf-stable whipping cream include alfredo sauce, ice cream, whipped topping, butter, sauces, as a thickening agent for soups or as is.

Gossner products can be purchased online HERE or at the Gossner Foods store at 1051 North 1000 West Logan, Utah 84321. Store hours are Monday-Saturday, 8 a.m. to 6 p.m. Some of their products can also be purchased at Lee's Market in North Salt Lake or Ogden. 

When purchased online, 8 oz. products are sold in cases of 27, while 32 oz. products are sold in cases of 12. 

Another brand of shelf-stable cream we've found is Nestle's Media Crema. 

Nestle's Media Crema isn't quite as creamy as Gossner's whipping cream, but its shelf life is a little longer, with expiration dates of usually 6 months to one year. Media Crema is more like a half & half than a cream, but it works great in sauces and as a thickening agent. It comes in 7 oz. cans, is similar in price to Gossner's products, and can be purchased at almost any grocery store in the hispanic/international foods section or in the baking aisle by the evaporated or sweetened condensed milk, which are also great shelf-stable dairy products for your food storage!

Although dairy products aren't a "necessity" when it comes to food storage and in times of distress, it's nice to have something on hand that can be used to make the foods we're used to, that bring comfort and fill hungry bellies. Shelf-stable dairy products are a great addition to any food storage supply.
